Here's my new favourite - Mexican refried beans. I looked at lots of recipes but they all seemed to just have a couple of ingredients. Some had cheese but no bacon. Others had bacon but no spices. One had no onion! So I blended the bits that I liked to most and came up with this...bon appetite.

This is a pretty simple but super tasty meal I always enjoy cooking: Tomato, chorizo and mozzarella orzo
Kind of like a risotto but with orzo pasta. A veggie friendly chorizo free version also an easy option
Ingredients:
Diced Onion
Diced garlic
Cherry tomatoes
Thyme
Tomato puree
Chorizo
Orzo
Boiled water with vege stock cube
Yummy mozzarella
Parmesan
Spinach
Fry off the onion and garlic on the hob.
Chop the cherry tomatoes, add a sprinkle of seasoning and pop them in the oven on about 200 degrees for 10 mins.
When the onion has softened add the thyme, tomato puree and chorizo. Cook for approx another couple of mins.
Add the orzo, a dash of olive oil and tomato puree. Then add the boiling water and vege stock cube Keep stirring gently allowing to slowly bubble for up to 10 mins (enough for the water to be absorbed and for the pasta to be al dente).
When the orzo is close to done add the mozzarella in torn up pieces, the parmesan, spinach and the oven baked cherry tomatoes. Stir in until that mozzarella and parmesan have melted in and worked their wonders.
Then gobble down.

Sounds interesting. I'd never heard of orzo.

I could do some sourdough crumpets for breakfast.

I could make these chocolate protein brownies for dessert/ as a snack
Plain flour
Cocoa powder
Protein powder
Butter
Honey
Chocolate chips
Milk
Method
1. Combine cocoa powder, protein powder and plain flour
2. Melt the butter, honey, and milk in a saucepan
3. Add wet ingredients to dry ingredients and combine together
4. Bake for 10 to 15 mins at 160c fan
