Sorry for the confusion folks - badly worded explanation. The soup is NOT veggie but I can avoid the butter to make it dairy free if it’s needed. It’s made with beef stock. I could try a veg stock but no idea what it would taste like!

Beth/Fran - I reckon I can make this with a veg stock. It should be tasty and hot which is what will be needed looking at the forecast!

I will make it tomorrow so i’ll do enough for everyone unless I hear otherwise.

I am going to make the onion soup veggie and dairy free so it should be fine for everyone. I’ll know whether it been a success later - about 40 onions to peel first!
